Our story
The name goes back to old New Orleans. As the story goes, husbands who'd spent the night carousing through the French Quarter would buy an outrageously loaded sandwich at sunrise, one big enough to count as an apology, and carry it home to make peace with a wife who'd been waiting up.
By the early 1900s "peacemaker" was already local slang for an overstuffed oyster loaf, showing up in The Picayune's Creole Cook Book in 1901. Some food historians call it a direct ancestor of the po'boy. We just kept the name.
